We travel throughout the Pacific Northwest exhibiting our birds at poultry shows, often placing on champion row, thus validating our breeding program. The less spoken, but equally important, validation comes from our kitchen where we enjoy fresh eggs and chicken dinners.
Jersey Giants were once referred to as "the poor mans turkey"; rightfully so as an 8lb carcass is common and makes an excellent slow roasting bird. Cornish also come in as "heavy duty" meat birds, being more stocky than the Giants. Both generally yield about a pound per month of age though this can vary. I recently butchered 3 JG cockerels @ 7-8 months for 7.5-8 lb yield and 2 Cornish @ 5 months, the pullet 4lbs, cockerel 5 lbs. Often a 6-7 month Cornish cockerel will be 7-8 lbs. We prefer the Cornish for BBQ and frying. Rotisserie is our favorite way to cook-when they fit!
